Anti-inflammatory kale butter on rye with boiled eggs…

Ok, so this kale butter started off as multi-tasking lunch and dinner… I was making some kale filling for stuffed peppers for dinner at the same time as making myself boiled eggs on rye for lunch… and ended up in the not-at-all famous but definitely delicious Dodd’s Kale Butter …

Recipe: Makes enough spread for 3 or 4 slices of rye. (It needs to be rye bread or another heavy bread or the bread might become soggy.) Alternatively, use as a filing for a sweet jacket potato, or a crispbread.

Ingredients:

8 handfuls of curly kale
A thumb of ginger root, diced
1 clove of garlic, mashed
Chunk of red cabbage, diced
Half a ripe avocado
Small handful of pumpkin seeds
Glug of olive oil
Flat teaspoon of turmeric powder
Salt & black pepper to season

Firstly, steam the kale with the ginger, garlic and cabbage for about 6-7 minutes or until the vegetables are brightly coloured. Put in the blender for a minute or so with the avocado, seeds, olive oil, turmeric and a dash of black pepper. Spread immediately on toasted rye and serve with boiled eggs – or jacket potato.

NB: If you’re trying to persuade a veggie hater into the kale habit – double the avocado to make for a creamier consistency.

Nutrition notes: Turmeric needs fat to be effective, so don’t skip the avocado. It is said – (though I have seen no evidence) that the presence of black pepper multiplies the effect of the turmeric – so this could be a great addition. Turmeric has been shown to be good for your brain. Further research is required into whether or not turmeric may inhibit the development of some cancers.  So all in all, a very tasty lunch that contains loads of vitamin C, vitamin A, iron, fibre and its turmeric content means it could also be anti-inflammatory.

Alternative serving suggestion: Alternatively, serve with some brown rice or dhal… You can gently warm it through in a pan if you’ve stored it in the fridge for a day or so to release the warming flavours. Hopefully will also work as a stuffed pepper filling. 🙂 …
